The Story

Italy produces around 33,000 tonnes of Mozzarella di Bufala every year of which only 16 percent is sold abroad.

The expression “mozzarella” derives from the verb “mozzare” (to cut off) which suggests the process of forming the mozzarella ball by detaching it from the stringy curd it is formed manually by hand.
